Étymol. et Hist. 1351 « sabre court à deux tranchants » (Lettre de rémission ds DU CANGE, s.v. cultellus). Prob. adaptation sur le rad. de couteau, de l'esp. cuchilla « grand poignard » (cf. coutille de Castille ds Froissart, éd. S. Luce, t. VII, p. 82), attesté dep. 1250 (Alexandre ds AL.), fém. de cuchillo (couteau).
DÉR. Coutil(l)ier, cou(s)tiller,(Coutilier, Coutillier, coutiller, coustiller) subst. masc., au Moy. Âge. Homme de pied dont les armes d'hast et de main étaient une coutille. Qu'étaient-elles devenues ces bannières féodales (...) ramassées sous les haies et les buissons par les coustillers de Galles et de Cornouailles...? (A. FRANCE, J. d'Arc, t. 1, 1908, p. 266). Son escorte particulière [du Macabre] (...) se composait de deux carabins (...) et de deux coutilliers (SAND, Beaux MM. Bois-Doré, t. 2, 1858, p. 116). — Dernière transcr. ds LITTRÉ : kou-ti-llié.
